Raw Vegan Spicy Ginger N Carrot Soup

Ingredients:

  • 1 pound carrots (~3 ½ cups), chopped
  • ½ medium yellow onion, chopped
  • 4 large garlic cloves
  • ½ cup cashews, soaked
  • 1 - 1 ½ inch ginger root
  • 1 cup unsweetened coconut milk
  • ¼ - ½ tsp red pepper (chili) flakes, or to taste
  • 1 ½ tsp pink himalayan or sea salt, or to taste
  • pinch of black pepper
  • curly parsley leaves, for garnish (optional)
  • turmeric powder, to taste, for garnish (optional)

Instructions:

  1. Prepare the Ingredients:
    Begin by chopping the carrots, yellow onion, garlic, and ginger. Soak the cashews in water for at least 30 minutes or overnight to soften them.

  2. Blend the Soup:
    In a high-speed blender, combine the carrots, onion, garlic, ginger, and soaked cashews. Add the coconut milk, red pepper flakes, salt, and black pepper. Blend until smooth and creamy. If you prefer a thinner consistency, you can add a bit more coconut milk to reach your desired texture.

    Taste the soup and adjust the seasoning. Add more salt, red pepper flakes, or ginger to suit your taste. If you like it extra spicy, feel free to add more red pepper flakes or a dash of cayenne.

  • Coconut Milk: Be sure to use unsweetened coconut milk for a creamy base without added sugar. You can make your own in a high speed blender, juicer or nut milk maker by combining 4 cups coconut water & 2 cups coconut flesh. 
  • Cashews: Soaking the cashews helps create that smooth, rich texture. If you forget to soak them overnight, a quick soak in warm water for at least 30 minutes will work just fine!
  • Spice Level: Adjust the level of red pepper flakes to your heat preference. For a more intense kick, feel free to add a dash of cayenne pepper as well.
