  • 1 - 2 tsp pink himalayan or sea salt

  • 4 medium on-the-vine tomatoes, chopped
  • 1 cup sun-dried tomatoes, soaked
  • 2 cloves garlic, minced
  • ½ cup yellow onion, diced
  • ½ small fresno pepper, seeds removed (optional, for some heat)
  • 2 tsp dried oregano
  • 2 tsp dried parsley
  • 2 tsp dried marjoram
  • ½ cup fresh basil leaves
  • 1 tsp pink Himalayan or sea salt
  • ¼ tsp black pepper (or to taste)

For Garnish:

  • dried basil, to taste
  • cilantro, diced (optional)
  • green onion, chopped (optional)

INSTRUCTIONS: 

Step 1: Prepare the Kelp Noodles

Kelp noodles are a fantastic, nutrient-packed substitute for traditional pasta. They’re made from seaweed, are low in calories, and rich in minerals like iodine. Here's how to prepare them:

  1. Rinse the Kelp Noodles: Start by draining the bag of kelp noodles. Give them a good rinse under cold water to remove any excess salt and to soften the texture.

  2. Massage with Lemon and Salt: Place the kelp noodles in a large bowl. Squeeze the juice of one lemon over the noodles, then sprinkle in 1 to 2 teaspoons of pink himalayan salt or sea salt.
