Raw Vegan Taco Salad

Who doesn't love tacos?! Tacos were one of my favorite foods growing up, but always left me feeling beyond bloated. Not this one! This fully raw vegan taco salad hits the spot, satisfies all my cravings without the heavy feeling that comes with eating traditional tacos. It's an absolute win-win! 🌮

INGREDIENTS:

  • ½ head ice berg lettuce, chopped or diced* 

  •  1 cup cilantro, diced 

  •  1 cup green onion stalks, chopped

  •  1 cup on-the-vine or roma tomatoes, chopped 

  •  nut meat to taste (see below for recipe)

  •  sour cream to taste (see below for recipe)

  •  chunky guacamole to taste (see below for recipe)

  •  fermented hot sauce, for garnish (optional)*

NUT MEAT RECIPE: 

  • 1 cup walnuts or almonds

  •  1 tsp coconut aminos

  •  ½ tsp chili powder 

  •  ½ tsp onion powder

  •  ½ tsp garlic powder

  •  ¼ tsp pepper or to taste

  •  ¼ tsp salt or to taste

  •  ⅛ tsp paprika

  •  ⅛ tsp cayenne pepper 

SOUR CREAM: 

  • 1 ½ cup cashews, soaked 

  •  2 tsps apple cider vinegar

  •  2 small lemons, juiced

  •  ½ tsp pink himalayan or sea salt 

  •  ¾ cup water

  •  chives to taste, for garnish (optional)

CHUNKY GUACAMOLE: 

  • 2 ripe avocados 
  • 1 - 2 handful(s) cilantro, diced 
  • 5 - 10 grape or cherry tomatoes, sliced or diced
  • ½ small red onion 
  • pink himalayan or sea salt to taste
  • black pepper to taste
  • cayenne pepper to taste (optional)
  • more cilantro leaves, for garnish (optional)

INSTRUCTIONS: 

  •  Wash ice berg lettuce thoroughly and chop finely.*
  •  Chop remaining ingredients: cilantro, green onion and tomatoes. 
  •  Add all ingredients into a large bowl. 
  •  Prepare taco meat, sour cream and chunky guacamole. Add your desired amount of each recipe into the bowl. 
  •  Garnish with fermented hot sauce (optional), mix thoroughly & enjoy! 

NOTES & TIPS: 

*It is best to buy organic ice berg lettuce. Feel free to use romaine lettuce as an alternative.

*I use the raw fermented hot sauce from Poor Devil Pepper Co in the flavor Little Frankie - my absolute favorite! Feel free to check out their other hot sauce flavors! 

*Place lettuce into a salad spinner to get rid of the excess water if desired.
